The Perfect Snack


Snack or lunch, really... I eat this quirky cracker combo for lunch nearly every time I work from home. It's quick, healthy, and delish.

Wasa Crackers (I like Multi Grain or Hearty)
Almond Butter*
Sharp Cheddar Cheese
Tomatoes
Jalepeños (or serranos depending on how spicy you like it)
Sea Salt
Cracked Pepper



* I normally spread on an organic chunky peanut butter but after numerous lectures by my research-heavy boyfriend on how peanuts are bad for you, I decided to switch it up. I love almond butter, don't get me wrong, and it does have a better fatty acid profile; it's just double the cost! But he did have a point (albeit a small one)... Peanuts are one of several raw agricultural products that contain Aflatoxins, which are toxic metabolites produced by certain fungi on foods. Click here to read more about Aflatoxins.

In a nut shell (heheh) it boils down to the old adage "everything in moderation".
